Paneer and Spinach Curry Pie
Ingredients:
1 tbsp vegetable oil
225g paneer, cut into 2cm cubes
2 tbsp ghee or butter
1 large onions, finely sliced
1 large garlic cloves, crushed
½ thumb-sized piece of ginger, finely grated
1/4 tsp hot chilli powder
1 tsp ground cumin
1 tsp fenugreek seeds
3/4 tbsp garam masala
1 x 400g cans chopped tomatoes
1 tbsp caster sugar
150g potato, peeled and cut into 2cm cubes
75g spinach
75g frozen peas
75ml double cream
1 tbsp cashew nut butter
plain flour, for dusting
150g sheet puff pastry
200g of shortcrust pastry
