Paneer and Spinach Curry Pie


Ingredients:

  • 1 tbsp vegetable oil

  • 225g paneer, cut into 2cm cubes

  • 2 tbsp ghee or butter

  • 1 large onions, finely sliced

  • 1 large garlic cloves, crushed

  • ½ thumb-sized piece of ginger, finely grated

  • 1/4 tsp hot chilli powder

  • 1 tsp ground cumin

  • 1 tsp fenugreek seeds

  • 3/4 tbsp garam masala

  • 1 x 400g cans chopped tomatoes

  • 1 tbsp caster sugar

  • 150g potato, peeled and cut into 2cm cubes

  • 75g spinach

  • 75g frozen peas

  • 75ml double cream

  • 1 tbsp cashew nut butter

  • plain flour, for dusting

  • 150g sheet puff pastry

  • 200g of shortcrust pastry

  • Serve with:

  • Raita

  • Mango Chutney
